About Diamond JEM Cabernet Sauvignon

The grapes for this vintage were selected from a minute portion of the grapes produced on Justin E. Marshall's 14 acre vineyard. The vineyard is situated on a South facing limestone rich hillside approximately 10 miles East of Hearst Castle and West of Paso Robles, California.

The vines planted in 1982 on their own root stock enjoy very warm days tempered by afternoon ocean breezes which drop the low temperature by as much as 50 degrees. This weather pattern during the growing season extends the period during which the grapes mature. Harvesting most often occurs in early November. This long maturation period contributes to the complexity of the flavors and the intensity of the color and aroma of the wine.

After the grapes are crushed and fermented a second time (malolactic fermentation) in Diamond JEM's temperature controlled stainless steel tank, the wine is transferred by gravity to new French Oak barrels produced by Seguin Moreau where they rest in Diamond JEM's cellar for 23 months prior to being bottled at the estate. Throughout the process the wine is never subjected to any pumping.

A total of 150 cases were bottled in October 2003 and have benefited by further bottle ageing. Alcohol is 13.6% by volume.

In August, 2005 the 2001 Vintage was released to the general public at a suggested retail price of $70.00.
